Quarantine meal ideas! 6 easy, healthy recipes to make at home! The majority of these recipes can be made with items you already have in your freezer or pantry- so you can make them already, or you can buy items 1 time through grocery delivery / a grocery run and make them for weeks to come. These are the healthy pantry meals and healthy freezer meals we've been making to cut back on grocery runs! These meal ideas are also made with ingredients that all should still be in stock at stores. Thankfully the fresh produce has not been selling out, and the pantry items like flaxseed / almond flour are still available [everyone is rushing on the toilet paper, not the bananas!] so hopefully you can try these out!
Peanut butter protein ball recipe
[not my original recipe, just the favorite one I found and what I currently use]
1/4 cup flax seed
1/4 cup dark chocolate chips
1 cup oats
2/3 cup creamy peanut butter
2 tbsp honey
Gnocchi + Peppers
Frozen cauliflower gnocchi from trader jones [any gnocchi works]
Frozen or fresh peppers
Sausage
Falafel wrap
Frozen falafel from trader joes
tortilla shell
hummus
cucumber [add red onion tomato if you have it, I just only had cucumber!]
Blender banana pancakes
Base recipe is 1 banana to 1 egg.
I add almond flour and oats, and a table spoon of flaxseed.
You could make it with just a banana and egg, or just oats or just almond flour if you had one or the other. I add the flour / oats to thicken the batter and make it a thicker pancake vs a very thin pancake.
Chicken noodle soup [I keep chicken stock and chicken in the freezer, so most of the ingredients you can keep on hand!]
1 ct low sodium chicken stock
1 chicken breast
celery, onion, carrots, potatoes and noodles
Chia bowls
3 tbsp chia seeds
1 cup almond milk
