South India's pride - #Vathakuzhambu or #Kaarakuzhambu using Sundakkai & Manathakaali. Let's see how to make it.
For Vathakuzhambu powder,
Ingredients
1 cup red chilies
1 cup toordhal
1/2 cup chana dhal
1/4 cup coriander seeds
2 tbsp each - pepper & cumin seeds
1 tbsp fenugreek
2 tbsp sesame oil.
First in a pan, add sesame oil and roast all the ingredients separately.
Allow it to cool completely and grind into a fine powder. Vathakuzhambu powder is ready.
For making Vathakuzhambu, you need
Lemon sized tamarind soaked in warm water,
1/4 cup turkey berries
1/4 cup wonder cherries
few appalams (urad papad)
1/4 cup peanuts
1/2 tsp jaggery
First heat sesame oil and fry the appalams. In the same oil, roast the berries until dark brown. Then add little mustard, peanuts, 1 tsp fenugreek, asafoetida, turmeric powder, curry leaves, salt and the kuzhambu powder. Roast it slightly. Then add the tamarind water and allow it to boil until it reduces to half the quantity. Now add the jaggery and fried appalams and cook for another 3 minutes. Mouthwatering Vathakuzhambu is ready!!
